Sächsisches Osterbrot Rezept (Saxonian Easter Bread Recipe)
You have tried Dresdner Stollen? The Saxonian Christmas specialty only 130 bakers and confectioners in and around Dresden are permitted to bake from the original (and closely guarded) patented recipe? Did you know that only they may call their finished product “Dresdner Stollen”?
Saxonian Easter Bread is Saxony’s Easter version of the Stollen and really not that much different, however subtle variances exist and the characteristic Stollen spices are not used. While it does not look as fancy as your usual braided Easter bread, it is quite tasty and fulfilling and you might just want to give it a try this upcoming Easter morning. The recipe is simple.
Start a day ahead.
Ingredients:
Dough:
1,000 gr (35 oz) wheat flour, 250 gr (8.5 fluid oz) whole milk, 80 gr (2.75 oz) yeast, 150 gr (5 oz) sugar, 400 gr (14 oz) butter or margarine, 200 gr (7 fluid oz) of whole egg, 10 gr (pinch) of salt, lemon and vanilla
Filling:
500 gr (1 lb) raisins, 60 gr (2 1/4 fluid oz) of rum, 100 gr (3 1/2 oz) coarsely chopped almonds, 50 gr (1 3/4 oz) candied orange peel, 50 gr (1 3/4 oz) candied lemon peel
Preparation:
At least 1 day head: soak the fruits in the rum, cover and keep at room temperature until ready to bake.
Crumble the yeast and mix with a portion of the sugar and 2 tablespoons warm milk. Then add the flour, stir and let the dough rest covered in a warm place for 25-30 minutes.
Now stir in the remaining butter and egg and add the remaining sugar until fluffy, mix with the 1st batch of dough and knead for about 4 minutes. Next mix in the rest of the milk, a pinch of salt and the rum soaked fruits and knead 4 more minutes. Then form a round loaf and let it rest covered in a warm place for half an hour. Then brush the dough with a little egg, and with a knife, cut a cross on top of the loaf and bake in a preheated oven for about 45-50 minutes.
